Abstract
ABSTRACT
This research use methods pyrolysis of biomass followed by condensation in the cooling condenser. The yield and optimum temperature of liquid smoke was19% at 140°C for skin durians, 23.6% at 170°C for coconut shells, and 20.8% at 175°C for palm shells. Organoleptic test results found that liquid smoke with biomass skin durians concentration of 5% is most preferred by the panelists.
