The Sintoga Mini Chocolate Factory is a processing factory that produced product based on cacao. To date, the planning of chocolate production is based on demand, without analysis or depth-estimating of production planning, so that the company not known the optimal level of production to improve the profit. This research purposes was to determine the optimal amount of production to fulfill the demand of cocoa products, the maximum profit and of utilization factory capacity at optimum production level. The result indicated that during the planning period, the average optimization of cocoa paralin production is 65.93 kg, brown stem 75 gr for 883 stems and 20 gr bar chocolate as much as 3725 stems. The optimal profit that can be achieved on average is Rp. 17.806.782, average of process optimization is 230.3 hours, average of optimization of brown fat consumption of 55.80 kg, chocolate paste 51.66 kg, sugar 51.66 kg, milk 45.47 kg, lecithin as much as 0.91 kg and soda as much as 0.14 kg.
