PEMANFAATAN TALAS LIAR ( Colocasia Esculenta L. Schoott ) MENJADI EDIBLE FILM DENGAN PENAMBAHAN GLISEROL

ABSTRACT
Taro (Colacosia esculenta L. Schott) has the potential to be used as a raw material in the manufacture of edible films because they contain starch which is high enough at 80% with amylose content of 21.44% and amylopectin content of 78.56%. Amylose content in starch can produce a strong edible film, but it is fragile. To improve the fragile properties of edible films, glycerol was added with a concentration of 0% v/v, 0.5% v/v, 1% v/v and 1.5% v/v. The highest tensile strength value with the addition of glycerol 0.5% v/v at a temperature of 90 ⁰C. with a value of 119 Mpa.
