Abstract

                    Inulin is generally separated from the source through extraction methods using solvents including water and ethanol. The purpose of this study was to compare the ability of water solvents and ethanol to extract inulin from dahlia tubers. The duration of contacting was 15 minutes and 30 minutes with masses of dahlia tuber starch 250 grams, 500 grams and 1000 grams. As well as settling time for 24 hours, 48 hours and 72 hours. With a waiting time of 1 day and 7 days. The results showed that the highest inulin obtained from ethanol solvents was 1000gram starch mass with 30 minutes contact time and 1 day waiting time which was 2.89%. While the lowest inulin acquisition is 2.64% conducted in contact time of 15 minutes and 7 days waiting time. The highest yield of inulin is 2.3% obtained from water solvents to starch ratio 1:2 with 30 minutes contact time and 1 day waiting time. While the lowest inulin acquisition is 1.7% conducted in 15 minutes contact time and 7 days waiting time.Keywords: inulin, dahlia, extraction.
