Abstract

Cane mill activities that produce red cane sugar traditionally, has been the main source of income in Lawang village, Agam district since hundreds of years ago. The main weakness was found in the traditional process conducted was a low rate evaporation, that resulting the longer time production and also requires more fuel. A device that has functions like evaporator which consists the series of aluminium plate baffle for the evaporation process has been studied in a traditional cane mill in Lawang village. This device was tested in the cooking pan of sugar cane juice that produces faster evaporation process. Number of baffle and diameter influence the area of rising film evaporation and faster the evaporation process to become 45% than usually got.
