Abstract

Suci Mesra Bread Factory is a company that produces bread, which is located at Jln. Berok No. A1 Pandan Air Mati Market. Solok. This company is able to produce ± 1000 pieces of bread per day, with several variants such as chocolate jam, coconut, rich juice, pandanus jam, pineapple jam, meses and bread for making sandwiches. In carrying out production, there are still product defects that have an impact on the development of the company, so it needs to be repaired. To solve this problem, six sigma is used with DMAIC stages. In the define stage by using SIPOC, it was found that the types of defects were burnt bread, non-fluffy bread and popcorn, at the measure stage the company sigma level was calculated, namely 3.48. At the Analyze stage, the causes of product defects were analyzed using a fishbone diagram. The cause of defects is due to several factors such as the operator is not careful in working, there are no standards in the use of temperature when baking and the age of the oven is old. For suggestions for improvement at the improve stage, work instructions are given for the problematic section and for control, suggestions are given to the company in the form of punish and reward rules for the employees concerned.
