Abstract

Edible film is a thin layer (biodegradable) used to coat food and can be eaten. Edible film is made of starch material. The purpose of this study was to determine the influence of temperature and concentration of glycerol in the manufacture of edible film, temperature (100ºC, 110ºC, 120ºC) and glycerol (1% w/v; 3% w/v; 5% w/v). The results showed optimum condition for the strength value of attraction 14,27 Mpa obtained at the addition of glycerol 3% w/v and a temperature of 110ºC. The highest elongation value is 45%, obtained in the treatment of glycerol addition of 5% w/v and temperature of 100ºC.
