Abstract

Red ginger essential oil is one of the products that play a role in the Indonesian economy. The main components of red ginger essential oil such as zingiberen, gingerol, and resin cause a distinctive aroma and can be used as raw materials for various types of products, both food and non-food. This study aims to study the effect of the withering process of red ginger on oil recovery using the hexane solvent extraction method. The results showed that the withering of red ginger had an effect on the acquisition of water content and the recovery of red ginger oil. In this study, the best water content was found on the 5th day withering process with a value of 6%.
