used by enterprise instant milk, vegeta and other prebiotic drinks. In addition, inulin is also used as a raw material for fructose syrup, ethanol and bioplastics. The composition of inulin in dahlia tubers including major composition is from

69.26 to 75.48%. Inulin is a white powder that is easily soluble in hot water. Extraction was a method for got inulin from dahlia tuber with water as solvent. Crossflow,counterflow,co-current flow method could be used to extraction for the maximum result. For optimally operation conditions for got inulin from dahlia tuber with extraction method at

70OC, and with time for 4 hours. The comparison mass raw material and volume of solvent is 1 : 2.
