ABSTRACT

 

Dahlia tubers are rich in agricultural produce carbohydrate content and inulin. Dahlia tubers is one tuber that has 79.8% of the carbohydrate content results that can be utilized for the production of glucose syrup. Enzymatic hydrolysis process is able to solve the polysaccharide compound into its constituent sugars monomer compound. a-Amylase enzymes. An enzymatic hydrolysis process that converts starch into glucose syrup tuber using a-Amylase enzymes can be isolated from microorganisms such as Aspergillus oryzae, Bacillus licheniformis, Bacillus subtilis and others. The purpose of this study is the effect of the amount and timing of enzyme hydrolysis of the glucose syrup. Hydrolysis process is done with a given enzyme concentration variation is 0.05%, 0.1%, 0.2%, sampling time 30 minutes, 60, 90, 120, 150, 180 and the set temperature of 50oC. The results of the research with the enzyme concentration of 0.2% of the dry weight of the material addressing the highest glucose levels 213 mg / dl in the hydrolysis time 150 minutes.
