Abstract

Barokah Cassava Chips is a home industry that produces cassava chips in a home environment. The production process of cassava chips still uses traditional methods. Currently, the cassava slicing process still uses a simple slicer in the form of a knife attached to wood without any thickness measurement so that the slices have different thicknesses depending on hand pressure. In this study, a portable cassava slicer was made, this tool is lighter and easier to move. The tool will use a motor so that the work method is more efficient than the previous cassava slicer. It is also expected that the existence of a new cassava slicer the burden and fatigue level of a slicer can be minimized and work productivity can be achieved. Portable cassava slicer designed with a size of 33 cm x 34 cm x 43 cm. Comparison of the process time of slicing 10kg cassava using the old slicer takes 47 minutes while using the new slicer takes 32 minutes 30 seconds 10kg so that it has decreased by 45%. Comparison of cassava slicing capacity per hour using the old slicer, the one-hour slicing capacity is 13kg while using the new slicer, the one-hour slicing capacity is 19kg, an increase of 32%. The slices using the new cassava slicer have an average thickness of 1.0145 mm.
