PEMBUATAN RAK PENGERING PISANG SALAI DENGAN 3 SISTEM PEMANAS
Abstract
ABSTRACT Pisang Salai Bu Atika is a small size industry that produced traditional food called pisang salai. Pisang salai used banana as main ingredient. Currently, Pisang Salai Bu Atika still used traditional method to get dried banana. Drying process only used sunlight as heat source while sliced bananas put on shelves at open space with direct sunlight. The purpose of this study was to design a shelf-type dryer that can be mobilized easily and was equipped with 3 alternative heat sources and can be applied to the banana salai business. It is expected to be a more effective and efficient tool that is technologically appropriate, without having to require special machine mechanization or an energy source that is quite large in cost. The tool designed is in the form of a shelf that can be used as a drying rack for bananas equipped with a place to collect heat energy in the shelf by using or additional heat and also more time-saving. Three heating system in this design were sunligtht, elpiji stove and wood bricket. Testing result shows that used elpiji stove as heat system gave a better result in term of drying time and water ratio in dried banana.
